Wow, this salad is crunchy! In fact, I had no idea that the English language was so lacking for words to describe this satisfying sensation. There four distinct types of crunchiness in this salad… Kelpunchy, Carrunchy, Cucrunchy, and Sesamerunchy.
- 2 carrots
- 1 cucumber
- 1 avocado
- 1 bunch green onion
- 1 tablespoon crushed sesame seeds
- 1 package of kelp noodles (16 ounces)
- 2 tablespoon sesame oil
- 1 tablespoon seasoned rice vinegar
- Dice the carrots, cucumber, and avocado into small pea sized pieces, and add to a large bowl. Slice the green onion and add it to the bowl. Crush the sesame seeds by pinching them between your fingers and sprinkling them into the salad. Rinse the kelp noodles in cold water, then drain before adding them to the salad bowl. Add the sesame oil, and the seasoned rice vinegar, and toss the ingredients together.
