This well rounded dressing will spruce up any veggies. The depth of flavor, and slight crunch make the dish highly satisfying. I love to dress a simple salad with a beautiful dressing as my lunch. It’s a perfect way to keep my lunch light, but sufficient to carry me through the day.

Ingredients

  • 2/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • 3 figs dried, fresh, or frozen
  • 1 small clove garlic
  • 1 dash salt
  • 1 teaspoon mustard

Instructions

  • Put everything in a blender. Blend until some air has been incorporated into the dressing.
  • Use it to dress a salad, or spread on veggies.
