Whip the egg whites until stiff peaks are formed. Sprinkle in a small pinch of herbs into the egg whites, and whip in for 5 seconds. Scoop the egg whites onto a pan lined with parchment paper and form into small nests. Sprinkle salt over the egg whites (be conservative, a little salt goes a long way in this dish). Bake for 3 minutes.
Gently drop the egg yolks into the egg whites, bake for 3-5 minutes or until the edges of the egg whites turn golden.
